Let's get personal... and a pregnant pause
As you may know, The Tea Nomad is a small business founded and run by Grace, our Chief Tea Nomad; and she will actually be having a baby in late November! Probably not news you'd typically hear from a business, but as an artisan maker of small batch, handblended teas- the lines between personal and business blur, and there is going to be some impact on our capacity and shipping dates.
We fully intend on filling all your orders during this festive season. But orders placed between 20-30th November will be shipped from 1 December and we kindly ask for your patience and understanding during this time.
No Christmas Markets but yes to our stockists!
Due to the update above as well as COVID restrictions, we will not be participating in any markets this year.

Well, what are you waiting for? It's time to indulge that wanderlust.
Tie Guan Yin is known as a green oolong- in that category of teas known as Oolong. Different categories, or types of tea, are determined by how they are processed and Oolongs sit somewhere between a black and green tea in terms of their level of oxidation. Whereas green teas undergo no oxidation and black teas undergo long oxidation, Oolongs are partially oxidised in an art-form like tea creation process whereby the tea master determines oxidisation to be anywhere from 10-80%. There can be both Dark Oolongs where the leaves look almost black, all the way through to Jade Oolongs that may be only 20-30% oxidised and remain very green. Then there are also baked (amber oolongs) that may undergo a secondary baking/roasting process.
Oolongs have long been popular in China and Taiwan, traditionally of the darker and shaped by rolling with long curvy leaves but the more contemporary style of wrap curling, with leaves that are less oxidised has created a more gentle, floral and aromatic tea- and it is this style of tea, the Tie Guan Yin that continues to be sourced from Fujian in China, that is used in our Maldives blend.
Balled oolongs like Tie Guan Yin offer a uniquely delicious floral sweetness that hints at spring flowers such as orchids, hyacinth and lilies of the valley. Breathe in a waft of Maldives, and the top notes that hit you initially will be the tart sweetness of pineapple and milky coconut; but the green oolong tea provides a floral mellowness, gently buttery to pick up on the creaminess in the coconut pieces and with a slightly roasted nutty base.
Visually, the weight of size of the balled leaves also holds up well against the pineapple and apple pieces of this blend- but the Tie Guan Yin we use is also reminiscent in colour, of the green shades of palm trees leaves that are such a key part of any image one has when dreaming of the Maldives.
It was also important that the tea leaf we used for Maldives suited cold brewing as ice tea- because what would wanderlusting about the Maldives be, without a refreshing tropical cocktail. Tie Guan Yin is fantastic cold brewed; it is also a leaf that holds up wonderfully well upon multiple steepings, and very much enjoyable both hot or cold brewed. In fact, my favourite way of enjoying Maldives whether or hot or cold brewed, is on that second steeping- there is a happy marriage of the fruity and the floral flavours that makes for easy sipping, and it's also a generous blend that is hard to over steep - rarely "bitter," though has just enough of that "green tea astringency" to keep my particular tea taste buds happy. If it ever verges that way, it is easy and delicious to add ice and fruit (if having cold) or a little extra hot water if drunk warm.
The only thing to remember?a little goes a long way. Maldives is a "heavy" blend given the pineapple and apple pieces, and remember that the Tie Guan Yin tea leaves are curled and rolled- so what seems like a little will take up more space as things unfurl! This is also why a test tube or canister of this blend contains more than lighter or bigger tea leaf blends like Shanghai. The liquid may also appear cloudy with the shredded coconut, but it is nothing to worry about and generally dissipates in later steepings.

METHOD:
1. In a small saucepan, bring 1C fresh water to boil.
2. Add 4tsp of Sydney tea and brew for 5min.
3. Strain and return to stove and bring to slow boil.
4. Add 1/2C white sugar and stir til dissolved
5. Allow syrup to cool, then pour into bottle to refrigerate.
When serving, add a splash or two to taste, to a glass of sparkling or soda water.
Add lemon slice, peach or mango pieces to garnish, if desired.
]]>Celebrating the summer fruits we associate with the Sydney Summer, this tea mocktail is simple to make and a great one for summer picnics and barbeques by the pool!
INGREDIENTS
Mix and enjoy on ice!
*To cold brew sydney, add 4 teaspoons of Sydney to 1L of cold water. Leave in the fridge for 4+ hrs (overnight).

Method: stir all with ice and a sprig of rosemary until super chilled. Then strain into glass and garnish with rosemary.
NOËL CHERRY SPRITZER (mocktail)
- 6 parts of Noël, cold brewed*
- 1 part The Curious Cabinet Dark Cherry Shrub Syrup
- splash of soda water
This mocktail spritzer is the perfect lunch or picnic accompaniment. The tea and shrub syrup mix can be made ahead of time and kept in the fridge, then served with a slice of orange and a splash of soda water.
*To cold brew Noël, simply add 4 tsp of tea to 1L cold water. Allow to sit for 4+ hours (or just make it the night before).

Who are GIVIT and what do they do?
From Batemans Bay, Bega, Bombala to Braidwood, GIVIT supports over 330 charities and community organisations who are working on the ground across affected areas.
Donations made via GIVIT provide critical and immediate support following disasters as well as providing longer recovery support to re-establish homes and help communities recover.

INGREDIENTS
1 heaped teaspoon The Tea Nomad Kyoto Tea
1/2 shot The Curious Cabinet Cherry Shrub Syrup
2 shots Dry London Gin (We used Tanquaray)
1/2 shot sweet white vermouth (We used Del Professor).
Combine Kyoto Tea and gin in a glass and steep for 2 hours.
Strain the infused gin into a cocktail mixing jug with lots of ice. Add Cherry Shrub Syrup and Vermouth. Stir to chill and dilute. Strain into a coupe glass. Garnish with orange peel. Spritz with rose water and dried roses (optional).

Bali Bliss
- 6 parts strongly pre-brewed Bali*
- 1 part The Curious Cabinet Mandarin Shrub Syrup
- 1 part soda water
Garnish with a twist of Orange rind (or slice). Can be enjoyed on ice, or hot, when a little extra soothing restoration is needed.
To make a big batch, pre brew the tea and mix with the shrub syrup, but add the soda upon serving to retain that invigorating fizz!
*Pre-brew a strong batch of our Bali blend. We recommend using 6 tsp of Bali to 2C freshly boiled water, brewed for 5min. Allow to cool if making this as a cold cocktail.

Hot Cross Buns
For the "cross" topping:

Lavender jam or golden syrup, for glazing
Bring the water to a boil. Remove from heat and steep Provence in the water for 15 minutes. Remove the tea leaves, squeezing as much liquid as possible out of them and discard. Let the tea cool until it is lukewarm.
In a small bowl, stir together the brewed tea, yeast, sugar and 1/2 cup of the flour. Set aside for 15 minutes.
Heat the butter and milk together in a small saucepan over a low heat until the butter has just melted; remove from heat and cool to room temperature. Whisk in the egg.
In a large mixing bowl, stir together the remaining flour, salt, mixed spice, lemon zest, orange zest and currants. Pour the tea mixture and the milk mixture over top. Stir together until there are only a few floury patches remaining. Tip the contents of the dough out onto a work surface and knead until smooth, about 10 minutes.
Clean the large mixing bowl and grease with some oil. Place the dough in the bowl, cover with oiled plastic wrap, and leave in a warm place to rise until doubled in size, about 1 hour.
Divide the risen dough evenly into 12 pieces and roll them into balls. Place onto a parchment-lined baking tray spaced a few inches apart. Slash a cross into the top of each bun using a sharp knife or razor. Cover with oiled plastic wrap and leave to rise for 30 minutes until doubled in size.
While the buns are rising, preheat the oven to 180°C.
Make the "cross" topping by stirring together the flour and enough water to make a loose paste. Transfer to a piping bag fitted with a small, plain tip (or a sandwich bag with the tip of one of the corners cut off).
Brush the risen buns all over with a little milk then pipe the cross mixture into the cross-shaped cuts.
Bake for 20 minutes until golden brown all over. While still warm, brush them with lavender jam or golden syrup. Cool completely then store in an airtight container for up to 5 days.

We were recently fortunate enough to spend a little time in London; a city that is close to our hearts. With friends living there, and it's central location as a base for European travels, this was not our first and not likely to be our last visit- so it was a trip spent wandering around old favourites with some new discoveries thrown in for good measure!
London is a town of walking for me- so aside from taking the tube when travelling across the city, I generally walk, despite the cold in this case, and I would recommend the same for anyone. The charming shopfronts and gems to be uncovered are everywhere, plus there is no better way to soak up the different vibes around this diverse and vibrant city.

2019. What a year. It began with a few false starts, as I dealt with some unexpected health issues, but inevitably for this travel lover, it all led to our first trip of the year- Japan. A place that I've been a few times, but will always be beyond worth revisiting. We delved deeper into the wonderful tea culture of Japan, visiting a tea farm in Uji, and attending specialty tea tastings and tea ceremonies that deepened our appreciation for tea as a ritual- a reminder that tea is something worth slowing down for, an experience to savour and indulge in- things that are very much a part of the Tea Nomad ethos. Timing our visit to the Mt Fuji area to the peak of their cherry blossom season was also just magic.
I also spent time experiencing the explosion of matcha in New York, but the other highlight of our travel year was a trip to Perth. A timely reminder of how amazing this country we call home is, and if you have been following along on our instastories, you will know that local tourism will certainly be a theme for me in 2020- perhaps not always as far as Perth, although any excuse you have to head west, DO IT. Words are woefully insufficient, so I will just leave a few snaps of the incredible coastline- with that warm and unbelievably turquoise- emerald Indian Ocean waters, relaxed atmosphere, wonderful produce and don’t even get us started on the wineries. Margaret River and its surrounds definitely demands a week on its own, and if Rottnest Island isn’t on your bucket list, add it now.
Christmas. There is something absolutely magical and just heartwarming about it - with the sense of joy in the air, full of celebrations and excitement. All the frills, all the festivities, all the feels. It's definitely our favourite time of year.
Having spent many years living abroad, Christmas was also the time of year that usually meant coming home- which was always amazing, but it meant a lot of wanderlusting about a white Christmas. Because as much as I love good Aussie Christmas, there’s nothing quite like how they do it over in Europe. Experiencing the festivities in cities like Berlin, Cologne, Brussels or Zurich - who have such a rich tradition with the grandest of traditional Christmas markets, remains a big bucket list item.

Bali was a blend that was always going to be. Both the destination and the flavours inspired by it have been much requested by so many of you, and the place itself is also very special to me. It was a blend where I instinctively knew the way I wanted it to make you feel, yet perhaps because of that, it was also a blend that was a little nerve-wrecking to create.
Take a sip of Sydney Summertime, our tea cocktail to celebrate the festive spirit down under.
The start of the Sydney summer coincides with the festive season, and the glorious vibe during those relaxed summer months is really quite unbeatable. Everyone is in the mood to celebrate so conversation is light and laughs come easy. It's a time for barefoot dinner parties, backyard barbecues and beachside picnics.
Inspired by the festive spirit, our friends at Teatini have created a tea cocktail aptly named, Sydney Summertime. A twist on the Gin Fizz, this cocktail is perfect for sipping throughout those long lingering days under the Australian sun.
Sydney Summertime
Ingredients*
· 15mL Sydney tea syrup
· 45mL Sydney infused gin
· 15mL fresh lemon juice
· Half a mango cheek
· Soda water to top
Sydney tea syrup
Add 1 tsp of tea to 125mL of freshly boiled water with 1 tsp raw sugar; brew for no more than 3 mins
Sydney infused gin
Add 1 tsp of tea to 50mL gin. Infuse for no more than 45 mins then fine strain.
Method
Muddle tea syrup, tea-infused gin, lemon juice and mango in a short glass. Add ice and churn. Top with soda water and garnish with a lemon round.
*per serve in a short or lowball glass.

But it has been our gift sets, a trio of destinations to be shared and enjoyed, which have proven particularly popular. After debuting at the iconic Bondi Markets, we ventured into our first incredible Sydney Tea Festival where we were overwhelmed by your support and sold out of our beloved canisters, which were launched at the Festival. These copper creations were our dream- what we envisioned when we created the brand as it sums up so much of what we are about. Luxurious and made for indulgence, they are double lidded to ensure freshness of our beloved tea blends, and enveloped with hand illustrations that tell the travel stories behind the blend.
Being able to meet some of you and share travel stories over sips of our teas has been priceless, and we can't wait to meet more of you at the upcoming Finders Keepers Market!
The response from retailers has been so heartening. From florists to gift services, spas and hampers, local and abroad, we are excited to know that our brand has found a place in the busy world out there, and we look forward to increasing the reach of our humble brand in 2018.
To celebrate our first birthday, we are also thrilled with our website refresh, thanks to the incredible talents of Tealily and Sandra Chau Design.

At first glance, Shanghai can be an overwhelming experience. The dizzying sights, the intense energy, the glitz and glamour, the noise and commotion. But, peek behind the facade, walk through to the French Concession, or go beyond the sprawling metropolis and you’ll be richly rewarded.
Wide avenues lined with leafy ancient trees, architecture embracing the European influence on this historic city and the celebration of a quieter time. There is a different pace of life treasured here; teahouses and old chess games, men with their bird cages and ladies quietly gossiping over endless cups of tea. This side of Shanghai as the “Paris of the East” exudes an unique charm- ornate lanterns swinging gently in the breeze, coiffed ladies on their afternoon wanders shaded by pretty umbrellas, and delicate florals scattered on the streets. The allure of old jazz clubs and the ubiquitous cheongsum in all its beauty.
Inspired by this setting, our Shanghai is a nostalgic nod to a bygone era. With whole Pai Mu Dan leaves as its base, naturally dried, organic chrysanthemum flowers are generously scattered alongside delicate osmanthus flowers, as flirtatious rose petals peek through with their pink hue. BBQs remain a beloved tradition, and there may be no better feeling than polishing off that last dozen oysters or fish and chips gazing out upon the twinkling waters, all the while barefoot. Picnics and fruit platters are a must, with colorful and oh-so-ripe summer fruits in abundance; nothing beats the delightful messiness of devouring those big Aussie mangoes, the sweet juiciness of peaches and the tart crunch of passionfruit.
